Boston Cream Pie Bites

Ingredients
- All-purpose flour (1 cup)
- Baking powder (1 teaspoon)
- Salt (1/4 teaspoon)
- Unsalted butter (1/2 cup (softened))
- Granulated sugar (1/2 cup)
- Egg (1 large)
- Vanilla extract (1 teaspoon)
- Milk (1/4 cup)
- Heavy cream (1 cup (for ganache))
- Semi-sweet chocolate chips (1 cup (for ganache))
- Milk (1 cup (for custard filling))
- Granulated sugar (1/3 cup (for custard filling))
- Vanilla extract (1 teaspoon (for custard filling))
- Egg yolks (2 large (for custard filling))
- Cornstarch (2 tablespoons (for custard filling))
Instructions
- Preheat the oven to 350°F (175°C) and grease a mini muffin tin.
- In a medium bowl, whisk together the all-purpose flour, baking powder, and salt; set aside.
- In a separate large bowl, cream together the softened unsalted butter and granulated sugar until the mixture is light and fluffy, about 3 minutes.
- Beat in the egg and vanilla extract until well combined.
- Gradually add the dry ingredients to the wet ingredients, alternating with the milk. Mix until just combined; do not overmix.
- Spoon the batter into the prepared mini muffin tin, filling each cup about 2/3 full.
- Bake for 12-15 minutes, or until a toothpick inserted into the center comes out clean.
- Remove from the oven and let the mini cakes cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
- Once the mini cakes are cooled, use a small knife to cut a small hole in the top of each cake.
- Prepare the custard filling by whisking together the milk, granulated sugar, egg yolks, cornstarch, and vanilla extract in a saucepan over medium heat. Stir continuously until the mixture thickens, about 5-7 minutes. Remove from heat and let it cool.
- Fill each hole with the prepared custard filling.
- In a microwave-safe bowl, melt the semi-sweet chocolate chips and heavy cream together in 30-second intervals, stirring until the mixture is smooth and glossy.
- Dip the top of each filled cake into the chocolate ganache, allowing any excess to drip off.
- Place the coated cakes on a wire rack to set the ganache.
