Servings: 4
Ingredients
- All-purpose flour
- 1 cup
- Baking powder
- 1 tablespoon
- Salt
- 1/4 teaspoon
- Granulated sugar
- 2 tablespoons
- Milk
- 1 cup
- Egg
- 1, large
- Vanilla extract
- 1 teaspoon
- Unsalted butter
- 2 tablespoons, melted
- Vanilla custard
- 1 cup (store-bought or homemade)
- Chocolate ganache
- 1/2 cup (store-bought or homemade)
Instructions
- In a large bowl, whisk together the flour, baking powder, salt, and sugar until well combined.
- In a separate bowl, beat the egg. Then add the milk, vanilla extract, and melted butter. Whisk until smooth.
- Pour the wet ingredients into the dry ingredients and stir gently until just combined. Be careful not to overmix; a few lumps are perfectly fine.
- Heat a non-stick skillet or griddle over medium heat. Lightly grease the surface with butter or cooking spray.
- Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, then flip and cook for an additional 1-2 minutes until golden brown and cooked through.
- Repeat the process with the remaining batter, greasing the skillet as needed.
- To assemble, place one pancake on a plate, spread a generous layer of vanilla custard on top, then add another pancake. Repeat this process to create a stack.
- Drizzle the top pancake with warm chocolate ganache for a decadent finish.
- Serve immediately and enjoy your delightful Boston Cream Pie Pancakes!
