Servings: 4

Ingredients

All-purpose flour
1 cup
Baking powder
1 tablespoon
Salt
1/4 teaspoon
Granulated sugar
2 tablespoons
Milk
1 cup
Egg
1, large
Vanilla extract
1 teaspoon
Unsalted butter
2 tablespoons, melted
Vanilla custard
1 cup (store-bought or homemade)
Chocolate ganache
1/2 cup (store-bought or homemade)

Instructions

  1. In a large bowl, whisk together the flour, baking powder, salt, and sugar until well combined.
  2. In a separate bowl, beat the egg. Then add the milk, vanilla extract, and melted butter. Whisk until smooth.
  3. Pour the wet ingredients into the dry ingredients and stir gently until just combined. Be careful not to overmix; a few lumps are perfectly fine.
  4. Heat a non-stick skillet or griddle over medium heat. Lightly grease the surface with butter or cooking spray.
  5. Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, then flip and cook for an additional 1-2 minutes until golden brown and cooked through.
  6. Repeat the process with the remaining batter, greasing the skillet as needed.
  7. To assemble, place one pancake on a plate, spread a generous layer of vanilla custard on top, then add another pancake. Repeat this process to create a stack.
  8. Drizzle the top pancake with warm chocolate ganache for a decadent finish.
  9. Serve immediately and enjoy your delightful Boston Cream Pie Pancakes!
