Boneless lamb or beef
1.5 pounds, cut into 1-inch cubes
Yogurt
1 cup, plain
Ginger-garlic paste
2 tablespoons
Lemon juice
2 tablespoons
Red chili powder
1 tablespoon
Turmeric powder
1 teaspoon
Coriander powder
1 tablespoon
Cumin powder
1 teaspoon
Garam masala
1 teaspoon
Salt
1 teaspoon, or to taste
Oil
2 tablespoons, plus extra for brushing
Onion
1 large, cut into wedges
Fresh coriander leaves
1/4 cup, chopped
Lemon wedges
for serving
Mint chutney
for serving

Instructions

  1. In a large mixing bowl, combine the yogurt, ginger-garlic paste, lemon juice, red chili powder, turmeric powder, coriander powder, cumin powder, garam masala, salt, and 2 tablespoons of oil to create a flavorful marinade.
  2. Add the meat cubes to the marinade, ensuring they are well-coated. Cover the bowl with plastic wrap and refrigerate for at least 2 hours, or overnight for the best flavor and tenderness.
  3. Preheat your grill or barbecue to medium-high heat, ensuring it's hot enough for a good sear.
  4. Thread the marinated meat onto skewers, alternating with pieces of chopped onion for added flavor and moisture.
  5. Brush the skewers with extra oil to prevent sticking and enhance the grilling process.
  6. Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the meat reaches your desired level of doneness.
