Instructions
- Begin by grating the potatoes and placing them in a clean kitchen towel. Squeeze out any excess moisture to ensure crispy pancakes.
- In a large mixing bowl, combine the grated potatoes with the flour, baking powder, and salt, stirring well to incorporate.
- Add the milk, beaten egg, melted butter, and chopped green onions to the potato mixture. Stir until all ingredients are well combined and a thick batter forms.
- Heat a generous amount of vegetable oil in a large skillet over medium heat. Ensure the oil is hot enough by testing with a small spoonful of batter; it should sizzle upon contact.
- Drop spoonfuls of the boxty batter onto the skillet, flattening each with the back of a spoon to form pancakes about 1/2 inch thick.
- Cook the boxty pancakes for 3-4 minutes on each side, or until they are golden brown and crispy. Adjust the heat as necessary to prevent burning.
- Once cooked, transfer the pancakes to a plate lined with paper towels to absorb excess oil.
- Serve the boxty pancakes hot, accompanied by toppings such as sour cream, smoked salmon, or sautéed mushrooms for a deliciously customizable meal.
Tips
- For a twist, try adding herbs like fresh parsley or dill to the batter for added flavor.
- Boxty can also be made using leftover mashed potatoes; simply replace the grated potatoes with an equal amount of leftover mash.
