Instructions
- Prepare the Belgian endive by trimming the bottoms and removing any wilted outer leaves.
- Melt the butter in a large skillet over medium heat.
- Add the Belgian endive heads to the skillet and cook for 5 minutes, turning occasionally, until they are lightly browned.
- In a separate bowl, combine the broth, lemon juice, honey, salt, and pepper. Whisk until well mixed.
- Pour this tangy-sweet broth mixture over the lightly browned Belgian endive in the skillet.
- Cover the skillet, reduce the heat to low, and let the endive simmer for 20 minutes, or until tender.
