Cilantro

Cheddar cheese
1 cup, shredded
Bacon
4 slices, cooked and crumbled
Eggs
4, large
Tortillas
4 (10-inch) flour or whole wheat

Instructions

  1. In a medium bowl, whisk the eggs with salt and pepper until well combined.
  2. Heat a non-stick skillet over medium heat. Add the diced onion and bell peppers. Sauté for about 5 minutes, or until softened and fragrant.
  3. Push the vegetables to one side of the skillet and pour in the beaten eggs. Allow the eggs to sit for a moment, then scramble them gently until fully cooked through.
