Hearty Breakfast Burrito

- Cilantro
 - 1/4 cup, chopped
 - Avocado
 - 1, sliced
 - Salsa
 - 1/2 cup
 - Salt

 - Onion
 - 1 small, diced
 - Bell peppers
 - 1 cup, diced (use a mix of red, green, and yellow for color)
 - Cheddar cheese
 - 1 cup, shredded
 - Bacon
 - 4 slices, cooked and crumbled
 - Eggs
 - 4, large
 - Tortillas
 - 4 (10-inch) flour or whole wheat
 
Instructions
- In a medium bowl, whisk the eggs with salt and pepper until well combined.
 - Heat a non-stick skillet over medium heat. Add the diced onion and bell peppers. Sauté for about 5 minutes, or until softened and fragrant.
 - Push the vegetables to one side of the skillet and pour in the beaten eggs. Allow the eggs to sit for a moment, then scramble them gently until fully cooked through.
 - Warm the tortillas in a dry skillet over low heat or microwave them for about 20 seconds until soft and pliable.
 - Assemble the burritos: Divide the scrambled eggs, crumbled bacon, shredded cheddar cheese, salsa, avocado slices, and chopped cilantro evenly among the tortillas.
 - Fold the sides of each tortilla over the filling, then roll them up tightly from the bottom to form the burritos.
