Ingredients

Bacon
6 slices
Eggs
6 large
Bell peppers
1 cup, diced (mix of colors)
Onion
1/2 cup, diced
Cheddar cheese
1 cup, shredded
Tortillas
4 large (10-inch)
Avocado
1, sliced
Cilantro
1/4 cup, chopped
Salsa
1/2 cup
Salt
to taste
Black pepper
to taste

Instructions

  1. In a large skillet, cook the bacon over medium heat until crispy, about 6-8 minutes. Remove from the skillet and crumble into small pieces, leaving the rendered fat in the pan.
  2. In the same skillet, add the diced bell peppers and onion. Sauté over medium heat until they are soft and slightly caramelized, about 5-7 minutes.
  3. In a bowl, whisk the eggs and season with salt and black pepper to taste.
  4. Pour the whisked eggs into the skillet with the sautéed vegetables. Cook over medium heat, stirring occasionally, until the eggs are scrambled and cooked through, about 4-5 minutes.
  5. Warm the tortillas in a separate skillet or in the microwave until pliable.
  6. To assemble each burrito, place a generous spoonful of the scrambled egg mixture onto the center of a tortilla. Top with crumbled bacon, shredded cheese, slices of avocado, a spoonful of salsa, and chopped cilantro.
  7. Fold the sides of the tortilla over the filling, then roll it up tightly from the bottom to form a burrito, making sure the filling is secure.
  8. Serve the breakfast burritos warm, garnished with extra salsa and cilantro if desired.
