  • Avocado (1, sliced)

Instructions

  1. In a large skillet, cook the bacon over medium heat until crispy, about 6-8 minutes. Remove from the skillet and crumble into small pieces, leaving the rendered fat in the pan.
  2. In the same skillet, add the diced bell peppers and onion. Sauté over medium heat until they are soft and slightly caramelized, about 5-7 minutes.
  3. In a bowl, whisk the eggs and season with salt and black pepper to taste.
  4. Pour the whisked eggs into the skillet with the sautéed vegetables. Cook over medium heat, stirring occasionally, until the eggs are scrambled and cooked through, about 4-5 minutes.
  5. Warm the tortillas in a separate skillet or in the microwave until pliable.
