Ingredients

Eggs
6 large
Salt

Black pepper

Bacon
6 slices, cooked and crumbled
Cheddar cheese
1 cup, shredded
Bell pepper
1, diced (any color)
Red onion
1/2, thinly sliced
Avocado
1, sliced
Salsa
1/2 cup (store-bought or homemade)
Tortillas
4 large (10-inch)
Olive oil or butter
1 tablespoon (for cooking eggs)

Instructions

  1. In a bowl, whisk the eggs with salt and pepper until well combined.
  2. Heat a non-stick skillet over medium heat and add olive oil or butter. Once hot, pour in the whisked eggs.
  3. Cook, stirring occasionally, until the eggs are fluffy and scrambled through, about 5 minutes. Remove from heat.
  4. Warm the tortillas in a dry skillet for about 30 seconds on each side or microwave for 15 seconds until pliable.
  5. On each tortilla, layer the scrambled eggs, crumbled bacon, shredded cheddar cheese, diced bell pepper, sliced red onion, and avocado slices.
  6. Drizzle salsa over the top of the filling in each tortilla.
  7. Fold the sides of the tortillas over the filling, then roll up tightly to form burritos.
