Ingredients
- Baby potatoes
- 1 pound, halved
- Bacon
- 6 slices, cut into 1-inch pieces
- Bell peppers
- 1 of each: red, yellow, and green, cut into 1-inch squares
- Olive oil
- 2 tablespoons
- Salt
- 1 teaspoon
- Black pepper
- 1/2 teaspoon
- Garlic powder
- 1/2 teaspoon
- Smoked paprika
- 1/2 teaspoon
Instructions
- Preheat your grill to medium heat.
- Place the halved baby potatoes in a large pot of boiling salted water. Cook until they are just tender, about 10 minutes. Drain and set aside to cool slightly.
- While the potatoes are boiling, add the bacon pieces to a skillet over medium heat. Cook until crispy, about 5-7 minutes. Remove the bacon from the skillet and place on paper towels to absorb excess grease.
- Once the potatoes have cooled, thread the skewers by alternating between a piece of bell pepper, a piece of bacon, and a half baby potato. Repeat this process until the skewer is filled.
- In a small bowl, mix the olive oil, salt, black pepper, garlic powder, and smoked paprika. Brush the prepared skewers with this mixture for added flavor.
- Place the skewers on the preheated grill. Grill for 10-15 minutes, turning occasionally, until the potatoes are crispy and the peppers are tender.
