Ingredients

Baby potatoes
1 pound, halved
Bacon
6 slices, cut into 1-inch pieces
Bell peppers
1 of each: red, yellow, and green, cut into 1-inch squares
Olive oil
2 tablespoons
Salt
1 teaspoon
Black pepper
1/2 teaspoon
Garlic powder
1/2 teaspoon
Smoked paprika
1/2 teaspoon

Instructions

  1. Preheat your grill to medium heat.
  2. Place the halved baby potatoes in a large pot of boiling salted water. Cook until they are just tender, about 10 minutes. Drain and set aside to cool slightly.
  3. While the potatoes are boiling, add the bacon pieces to a skillet over medium heat. Cook until crispy, about 5-7 minutes. Remove the bacon from the skillet and place on paper towels to absorb excess grease.
  4. Once the potatoes have cooled, thread the skewers by alternating between a piece of bell pepper, a piece of bacon, and a half baby potato. Repeat this process until the skewer is filled.
  5. In a small bowl, mix the olive oil, salt, black pepper, garlic powder, and smoked paprika. Brush the prepared skewers with this mixture for added flavor.
  6. Place the skewers on the preheated grill. Grill for 10-15 minutes, turning occasionally, until the potatoes are crispy and the peppers are tender.
