Briouats, a jewel of Moroccan cuisine, are exquisite pastries encapsulating a harmonious blend of ground beef, aromatic spices, and fresh herbs, all encased in layers of crispy, buttery phyllo dough. Each bite offers a delightful crunch leading to a savory, flavorful filling, transporting you to the bustling souks of Morocco.

Ingredients
- Butter
- 1/2 cup, melted
- Phyllo dough
- 12 sheets
- Salt
- 1 teaspoon
- Pepper
- 1/2 teaspoon
- Ground cinnamon
- 1 teaspoon
- Ground cumin
- 1 teaspoon
- Fresh cilantro
- 1/4 cup, chopped
- Garlic
- 2 cloves, minced
- Onion
- 1 medium, finely chopped
- Ground beef
- 1 lb
Instructions
- In a large skillet over medium heat, cook the ground beef, onion, and garlic, stirring occasionally until the beef is thoroughly browned and the onion is tender.
- Add the chopped cilantro, cumin, cinnamon, salt, and pepper to the skillet. Mix well, ensuring the spices are evenly distributed throughout the meat mixture. Remove skillet from heat and allow the mixture to cool.
- Preheat your oven to 375°F (190°C) and prepare a baking sheet by lining it with parchment paper.
- Cut the phyllo dough into 3-inch wide strips. Keep the unused phyllo covered with a damp towel to prevent it from drying out.
- Take one strip of phyllo dough, brush it generously with melted butter. Spoon a small amount of the cooled meat mixture onto the end of the strip.
- Fold the dough over the filling to form a triangle. Continue folding, maintaining the triangle shape, until you reach the end of the strip. Repeat this process with the remaining dough and filling.
- Place the filled briouats on the prepared baking sheet. Brush the tops with additional melted butter for a golden, crispy finish.
- Bake for 15-20 minutes, or until the briouats are golden brown and crispy. Let them cool slightly before serving to ensure the filling is not too hot.
