Instructions
- In a large mixing bowl, combine the broccoli florets, dried cranberries, finely chopped red onion, toasted sunflower seeds, and the crumbled bacon. Toss well to mix.
- Prepare the dressing: In a separate smaller bowl, combine the Greek yogurt, mayonnaise, apple cider vinegar, honey, salt, and freshly ground black pepper. Whisk until smooth and well-blended.
- Gradually pour the creamy dressing over the broccoli mixture. Toss gently until all the ingredients are evenly coated.
- Cover the bowl with a plastic wrap and refrigerate for at least an hour. This allows the flavors to meld together and the broccoli to absorb the dressing.
- Before serving, give the salad a quick mix to redistribute the dressing. Serve chilled and enjoy!
Tips
- For an extra crunch, add some chopped almonds or walnuts.
- If you're a cheese lover, consider adding a handful of crumbled feta or blue cheese.
- For a vegan version, skip the bacon and replace the Greek yogurt and mayonnaise with vegan alternatives.
