Broccoli and Ham Omelette

Ingredients

  • Butter (1 tablespoon)
  • Black pepper (1/4 teaspoon, freshly ground)
  • Salt (1/4 teaspoon)
  • Cheddar cheese (1/2 cup, shredded)
  • Milk (2 tablespoons)
  • Eggs (4, large)
  • Ham (1/2 cup, diced)
  • Broccoli (1 cup, chopped)

Instructions

  1. In a small pot, add enough water to cover the bottom and bring to a boil. Add the chopped broccoli and steam until tender, about 5 minutes. Drain well and set aside.
  2. In a large bowl, whisk together the eggs, milk, salt, and freshly ground black pepper until well combined.
  3. Heat the butter in a non-stick skillet over medium heat until it starts to sizzle.
  4. Pour the egg mixture into the skillet and let it cook undisturbed for about a minute or until the edges start to set.
  5. Sprinkle the steamed broccoli and diced ham evenly over one half of the omelette.
  6. Sprinkle the shredded cheddar cheese over the broccoli and ham.
  7. Using a spatula, gently fold the other half of the omelette over the filling and cook for another 2-3 minutes, or until the cheese is melted and the omelette is cooked to your liking.
