Ingredients

Butter
2 tablespoons
Onion
1 medium, diced
Garlic
2 cloves, minced
Potatoes
2 medium, diced
Broccoli
4 cups, chopped into florets
Vegetable broth
4 cups
Milk
1 cup
All-purpose flour
1/4 cup
Cheddar cheese
1 cup, shredded
Green onions
2, chopped (for garnish)
Salt
to taste
Pepper
to taste

Instructions

  1. In a large pot, melt the butter over medium heat.
  2. Add the diced onion and minced garlic. Sauté for about 5 minutes until the onion is translucent and fragrant.
  3. Stir in the diced potatoes and broccoli florets, mixing well to combine with the onion and garlic.
  4. Pour in the vegetable broth and bring the mixture to a boil. Once boiling, reduce the heat to a simmer and cook for 15-20 minutes, or until the potatoes are tender.
  5. In a separate bowl, whisk together the milk and all-purpose flour until smooth and lump-free.
  6. Slowly pour the milk mixture into the pot, stirring constantly to prevent lumps from forming. Continue to cook for an additional 5 minutes, or until the chowder thickens to your desired consistency.
  7. Season the chowder with salt and pepper to taste.
  8. Remove the pot from heat and stir in the shredded cheddar cheese until fully melted and creamy.
  9. Serve the broccoli chowder hot, garnished with chopped green onions for a fresh touch.
