Butter
2 tablespoons
Onion
1 medium, chopped
Garlic
3 cloves, minced
Broccoli
4 cups, chopped (about 2 heads)
Vegetable broth
4 cups
Heavy cream
1 cup
Salt
to taste
Pepper
to taste
Lemon juice
1 tablespoon (optional, for brightness)

Instructions

  1. In a large pot, melt the butter over medium heat.
  2. Add the chopped onion and minced garlic. Cook until the onion is translucent and fragrant, about 5 minutes.
  3. Stir in the chopped broccoli and pour in the vegetable broth. Bring the mixture to a boil, then reduce the heat and let it simmer for 15 minutes, or until the broccoli is tender.
  4. Using an immersion blender or transferring the mixture to a regular blender in batches, puree the soup until smooth and creamy. Return the soup to the pot if using a regular blender.
  5. Stir in the heavy cream and season with salt and pepper to taste. For an extra touch of flavor, add lemon juice if desired.
  6. Simmer for an additional 5 minutes, allowing the flavors to meld and the soup to heat through.
