
Broccoli Soup
A creamy and flavorful broccoli soup that is perfect for a comforting meal.
Ingredients
- Salt and pepper (to taste)
- Butter (2 tablespoons)
- Heavy cream (1 cup)
- Vegetable broth (4 cups)
- Garlic (2 cloves, minced)
- Onion (1 medium, chopped)
- Broccoli (2 heads, chopped)
Instructions
- In a large pot, melt the butter over medium heat.
- Add the chopped onion and minced garlic. Cook until the onion is translucent, about 5 minutes.
- Add the chopped broccoli and vegetable broth to the pot. Bring to a boil, then reduce the heat and simmer for 15 minutes, or until the broccoli is tender.
- Using an immersion blender or regular blender, puree the soup until smooth.
- Return the soup to the pot and stir in the heavy cream. Season with salt and pepper to taste.
- Simmer for an additional 5 minutes to heat through.
- Serve hot and enjoy!
