Enhanced Bubble and Squeak
Bubble and Squeak is a cherished British classic that transforms leftover mashed potatoes and vegetables into a mouthwatering crispy delight. Ingredients
- Mashed potatoes
- 2 cups
- Cooked vegetables (e.g., cabbage, carrots, peas)
- 2 cups, chopped
- Onion
- 1, finely chopped
- Unsalted butter
- 2 tablespoons
- Vegetable oil
- 2 tablespoons
- Salt
- to taste
- Black pepper
- to taste
- Malt vinegar or ketchup
- for serving
Instructions
- In a large mixing bowl, combine the mashed potatoes, cooked vegetables, and finely chopped onion. Season generously with salt and black pepper to taste. Mix thoroughly until all ingredients are well combined.
- In a large frying pan, heat the unsalted butter and vegetable oil over medium heat until the butter is melted and bubbling.
- Add the potato and vegetable mixture to the pan, pressing it down firmly with a spatula to form a flat cake, approximately 1 inch thick.
- Cook for 10-12 minutes without stirring, until the bottom is golden brown and crispy.
- Carefully flip the Bubble and Squeak using a large spatula. If it breaks, simply press it back together with the spatula.
- Cook for an additional 8-10 minutes, or until the other side is also golden brown and crispy.
- Once cooked, remove the Bubble and Squeak from the pan and let it rest for a couple of minutes before cutting into wedges.
- Serve hot as a delicious side dish or a hearty breakfast, with a splash of malt vinegar or a dollop of ketchup for added flavor.
