Ingredients

Buckwheat flour
1 cup
Egg
1 (for the batter)
Salt
1/4 teaspoon
Water
2 cups
Butter
2 tablespoons (for frying)
Ham
8 slices
Cheese (your choice, Emmental or Gruyere are traditional)
1 cup, grated
Eggs
8 (for the filling)

Instructions

  1. In a large bowl, whisk together the buckwheat flour, egg, and salt. Gradually pour in the water while continuing to whisk, ensuring a smooth, lump-free batter.
  2. Let the batter rest for at least 2 hours in the refrigerator. This allows the flour to fully hydrate and results in a more tender galette.
  3. Heat a small amount of butter in a non-stick frying pan over medium heat. Pour a ladleful of the batter into the pan, quickly swirling it around to evenly cover the surface. Cook for 1-2 minutes, or until the edges start to curl up.
  4. Flip the galette using a spatula and cook for another 1-2 minutes.
  5. Place a slice of ham in the center of the galette, sprinkle with cheese, and crack an egg on top. Fold the edges of the galette towards the center to create a square shape, leaving the egg yolk exposed.
  6. Cover the pan and cook for a few more minutes, until the egg is cooked to your liking and the cheese is melted. Repeat with the remaining batter and fillings.
