Cauliflower
1 large head, cut into florets
Olive oil
2 tablespoons
Garlic powder
1 teaspoon
Salt
1/2 teaspoon
Buffalo sauce
1/2 cup
Unsalted butter
2 tablespoons, melted
Celery sticks
for serving
Blue cheese dressing
1/2 cup, for serving

Instructions

  1. Preheat your oven to 450°F (230°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine the cauliflower florets, olive oil, garlic powder, and salt. Toss until the cauliflower is evenly coated.
  3. Spread the cauliflower in a single layer on the prepared baking sheet. Bake for 20 minutes, or until the cauliflower is tender and beginning to brown.
  4. While the cauliflower is baking, prepare the buffalo sauce mixture by combining the buffalo sauce and melted butter in a small bowl. Whisk together until well blended.
  5. Remove the cauliflower from the oven and drizzle the buffalo sauce mixture over it. Toss gently to ensure all the florets are coated.
  6. Return the cauliflower to the oven and bake for an additional 5 minutes, or until the sauce is hot and bubbly.
  7. Serve the buffalo cauliflower hot, accompanied by blue cheese dressing and fresh celery sticks on the side.
