Buffalo Chicken Hashbrowns

Ingredients
- Green onions
- 1/2 cup, finely chopped
- Cheddar cheese
- 1 cup, shredded
- Salt
- 1/2 teaspoon, or to taste
- Pepper
- 1/4 teaspoon, or to taste
- Garlic
- 2 cloves, minced
- Onion
- 1 medium, chopped
- Hashbrowns
- 4 cups, frozen
- Olive oil
- 2 tablespoons
- Buffalo sauce
- 1/2 cup
- Chicken breasts
- 2, boneless and skinless
Instructions
- Preheat the oven to 375°F (190°C).
- Place the chicken breasts in a baking dish and evenly pour the buffalo sauce over them. Bake for 20-25 minutes, or until the chicken is cooked through and no longer pink in the center.
- While the chicken is cooking, heat the olive oil in a large skillet over medium heat. Add the chopped onion and minced garlic, sauté until they become translucent.
- Add the hashbrowns to the skillet, spread them out evenly. Cook until they're crispy and golden, stirring occasionally.
- Once the chicken is done, shred it using two forks. Add the shredded chicken to the skillet, stir to combine with the hashbrowns. Season with salt and pepper to taste.
- Sprinkle the shredded cheddar cheese over the top of the hashbrowns and chicken mixture. Cover the skillet and cook until the cheese is melted, about 2-3 minutes.
- Before serving, top the dish with the finely chopped green onions. Serve it warm.
