Ingredients

Green onions
1/2 cup, finely chopped
Cheddar cheese
1 cup, shredded
Salt
1/2 teaspoon, or to taste
Pepper
1/4 teaspoon, or to taste
Garlic
2 cloves, minced
Onion
1 medium, chopped
Hashbrowns
4 cups, frozen
Olive oil
2 tablespoons
Buffalo sauce
1/2 cup
Chicken breasts
2, boneless and skinless

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Place the chicken breasts in a baking dish and evenly pour the buffalo sauce over them. Bake for 20-25 minutes, or until the chicken is cooked through and no longer pink in the center.
  3. While the chicken is cooking, heat the olive oil in a large skillet over medium heat. Add the chopped onion and minced garlic, sauté until they become translucent.
  4. Add the hashbrowns to the skillet, spread them out evenly. Cook until they're crispy and golden, stirring occasionally.
  5. Once the chicken is done, shred it using two forks. Add the shredded chicken to the skillet, stir to combine with the hashbrowns. Season with salt and pepper to taste.
  6. Sprinkle the shredded cheddar cheese over the top of the hashbrowns and chicken mixture. Cover the skillet and cook until the cheese is melted, about 2-3 minutes.
  7. Before serving, top the dish with the finely chopped green onions. Serve it warm.
