Chicken breast
2 boneless, skinless
Salt
to taste
Black pepper
to taste
Hamburger buns
2, preferably whole wheat or brioche
Red onion
1 small, thinly sliced
Tomato
1 medium, sliced
Lettuce
2 leaves, washed and dried
Mayonnaise
2 tablespoons
Buffalo sauce
2 tablespoons (more for drizzling, if desired)

Instructions

  1. Preheat the grill or stovetop grill pan over medium-high heat.
  2. Season the chicken breasts generously with salt and pepper on both sides.
  3. Grill the chicken for 6-8 minutes per side, or until the internal temperature reaches 165°F (75°C) and the chicken is cooked through.
  4. Remove the chicken from the grill and let it rest for 5 minutes to allow the juices to redistribute.
  5. In a small bowl, mix together the buffalo sauce and mayonnaise until well combined to create a creamy buffalo mayo.
  6. Spread a generous amount of the buffalo mayo mixture on the bottom half of each hamburger bun.
  7. Place a grilled chicken breast on top of the buffalo mayo.
  8. Layer with lettuce, tomato slices, and red onion slices, adding more buffalo sauce if desired for extra heat.
  9. Cover with the top half of the hamburger bun.
