Bulalo
Bulalo is a beloved Filipino beef soup that warms the heart and soul with its rich flavors and tender meat. Traditionally made with beef shanks and bone marrow, this savory dish is simmered to perfection with a medley of fresh vegetables. Originating from the Batangas region, Bulalo is often enjoyed during family gatherings and cold weather, making it a staple comfort food in Filipino households. Ingredients
- 10 cups, divided Water
- 2 lbs, cut into pieces Beef shanks
- 1 lb, preferably from beef shanks Bone marrow
- 1 large, quartered Onion
- 5 cloves, crushed Garlic
- 2, cut into thirds Corn on the cob
- 2 cups, chopped Bok choy
- 3 tablespoons Fish sauce
- to taste Pepper

Instructions
- In a large pot, bring 5 cups of water to a boil.
- Add the beef shanks and bone marrow to the pot. Boil for 5 minutes, then remove the meat and discard the water.
- In the same pot, add an additional 5 cups of fresh water and bring it to a boil again.
- Return the beef shanks and bone marrow to the pot along with the quartered onion and crushed garlic. Reduce the heat to low and simmer for 2 hours, or until the beef is tender.
- Skim off any impurities that rise to the surface during simmering to keep the broth clear.
- After 2 hours, add the corn on the cob pieces and simmer for another 10 minutes.
- Stir in the chopped bok choy and fish sauce, cooking for an additional 5 minutes until the bok choy is wilted.
- Season the soup with pepper to taste before serving.
- Ladle the hot Bulalo into bowls, ensuring each serving has beef shanks, bone marrow, vegetables, and a generous amount of broth.

- For a richer flavor, you can roast the beef shanks and bone marrow in the oven before boiling them.
