
Bun Ga Xao
Bun Ga Xao is a flavorful Vietnamese dish made with marinated lemongrass chicken served over vermicelli noodles and fresh vegetables.
Ingredients
- Lime wedges (for serving)
- Roasted peanuts (1/4 cup, crushed)
- Mint leaves (1/4 cup, chopped)
- Carrots (1, julienned)
- Cucumber (1, thinly sliced)
- Lettuce (2 cups, shredded)
- Vermicelli noodles (6 ounces, cooked according to package instructions)
- Vegetable oil (2 tablespoons)
- Sugar (1 tablespoon)
- Soy sauce (1 tablespoon)
- Fish sauce (2 tablespoons)
- Garlic (3 cloves, minced)
- Lemongrass (2 stalks, minced)
- Chicken breast (2, boneless and skinless)
Instructions
- In a bowl, combine the minced lemongrass, minced garlic, fish sauce, soy sauce, and sugar to make the marinade.
- Slice the chicken breast into thin strips and add them to the marinade. Let it marinate for at least 20 minutes.
- Heat the vegetable oil in a large skillet over medium-high heat.
- Add the marinated chicken and cook until it is cooked through and slightly caramelized, about 5-7 minutes.
- Prepare the vermicelli noodles according to the package instructions.
- To serve, divide the cooked vermicelli noodles among two bowls.
- Top with the cooked lemongrass chicken, shredded lettuce, sliced cucumber, julienned carrots, chopped mint leaves, and crushed roasted peanuts.
- Serve with lime wedges on the side.
