Servings: 2

Ingredients

  • Chicken breast (1 lb, thinly sliced)
  • Lemongrass (2 stalks, minced)
  • Garlic (3 cloves, minced)
  • Fish sauce (2 tablespoons)
  • Soy sauce (1 tablespoon)
  • Sugar (1 tablespoon)
  • Vegetable oil (2 tablespoons)
  • Vermicelli noodles (8 oz)
  • Lettuce (2 cups, shredded)
  • Cucumber (1, sliced)
  • Carrots (1, julienned)
  • Mint leaves (1/2 cup, chopped)
  • Roasted peanuts (1/4 cup, crushed)
  • Lime wedges (for serving)

Instructions

  1. In a medium bowl, whisk together the minced lemongrass, minced garlic, fish sauce, soy sauce, and sugar to create a flavorful marinade.
  2. Add the sliced chicken breast to the marinade, ensuring all pieces are well-coated. Cover and allow the chicken to marinate for at least 20 minutes, or up to 1 hour for a more intense flavor.
  3. In a large skillet, heat the vegetable oil over medium-high heat. Once hot, add the marinated chicken along with all of the marinade. Sauté for about 5-7 minutes, stirring occasionally, until the chicken is cooked through and slightly caramelized.
  4. Meanwhile, prepare the vermicelli noodles according to the package instructions. Once cooked, drain and rinse under cold water to stop the cooking process, then set aside.
  5. To assemble, divide the cooked vermicelli noodles among two bowls, creating a nest for the toppings.
  6. Top each bowl with the cooked lemongrass chicken, followed by shredded lettuce, sliced cucumber, julienned carrots, and chopped mint leaves.
  7. Sprinkle crushed roasted peanuts on top for added crunch.
  8. Serve with lime wedges on the side, allowing each diner to squeeze fresh lime juice over their bowl for an extra burst of freshness.
  9. Enjoy the delicious Bun Ga Xao!
