Bunny Chow

- 2 tablespoons Olive oil
- 2 tablespoons Curry powder
- 1.5 pounds, boneless and skinless Chicken thighs
- 1 large, diced Onion
- 4 cloves, minced Garlic
- 2 medium, diced Tomatoes
- 2 medium, peeled and diced Potatoes
- 2 cups Chicken stock
- to taste Salt
- to taste Pepper
- 1 (preferably unsliced) Loaf of white bread
- 1/4 cup, chopped (for garnish) Fresh cilantro

Instructions
- In a large pot, heat the olive oil over medium heat. Add the curry powder and sauté for about 1 minute, until fragrant.
- Add the chicken thighs to the pot and brown them on all sides, approximately 5-7 minutes.
- Stir in the diced onion and minced garlic, cooking until the onion is soft and translucent, about 3-4 minutes.
- Add the diced tomatoes and potatoes, along with the chicken stock. Season with salt and pepper to taste.
- Cover the pot and let the mixture simmer for about 40 minutes, or until the chicken is cooked through and the potatoes are tender.
- While the curry is cooking, prepare the bread. Cut the loaf of bread in half lengthwise and carefully hollow out the inside to create a sturdy shell.
- Once the curry is ready, spoon the flavorful mixture into the hollowed-out bread halves.
- Garnish with fresh cilantro before serving. Enjoy your Bunny Chow hot, with extra bread on the side for dipping!
