Ingredients

Chicken breast
1 lb, boneless and skinless
Taco seasoning
2 tablespoons
Cooked rice
1 cup
Canned black beans
1 can (15 oz), drained and rinsed
Tortillas
4 large (10-inch)
Shredded cheese
1 cup, cheddar or mexican blend
Salsa
1 cup
Sour cream
1/2 cup
Diced tomatoes
1 cup
Sliced avocado
1, medium
Diced onions
1/2 cup
Shredded lettuce
2 cups

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Season the chicken breasts generously with taco seasoning on both sides.
  3. In a skillet over medium heat, cook the chicken for 6-8 minutes per side until fully cooked and the internal temperature reaches 165°F (74°C).
  4. Remove the chicken from the skillet and let it rest for a few minutes. Then, slice it into strips.
  5. Warm the tortillas in the oven for about 5 minutes to make them pliable.
  6. In the center of each tortilla, layer the cooked rice, black beans, sliced chicken, shredded lettuce, diced tomatoes, diced onions, sliced avocado, sour cream, salsa, and shredded cheese.
  7. Fold the sides of the tortilla over the filling, then roll it up tightly from the bottom to form a burrito.
  8. Place the burritos seam-side down on a baking dish and bake for an additional 10 minutes if you prefer a crispy exterior.
