Ingredients

Chicken breasts
2, boneless and skinless
Taco seasoning
2 tablespoons
Cooked rice
1 cup
Canned black beans
1 can (15 oz), drained and rinsed
Shredded cheese
1 cup (cheddar or mexican blend)
Tortillas
4 large (10-inch) flour or corn
Sour cream
1/2 cup
Salsa
1/2 cup
Lettuce
1 cup, shredded
Tomatoes
1 cup, diced
Avocado
1, sliced
Cilantro
1/4 cup, chopped

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Season the chicken breasts generously with taco seasoning on both sides.
  3. Heat a skillet over medium heat. Add a splash of oil if desired and cook the chicken breasts for 6-8 minutes per side, or until they are cooked through and no longer pink in the center.
  4. Remove the chicken from the skillet and let it rest for a few minutes. Once rested, slice it into thin strips.
  5. Warm the tortillas in the oven for about 5 minutes to make them pliable.
  6. On a flat surface, place a warmed tortilla and spread a spoonful of cooked rice in the center.
  7. Add a spoonful of black beans, a few strips of chicken, and a generous sprinkle of shredded cheese.
  8. Fold the sides of the tortilla over the filling, then roll it up tightly from the bottom to form a burrito.
  9. Repeat with the remaining tortillas and filling.
  10. Place the assembled burritos seam-side down on a baking sheet and bake for 10-12 minutes, or until the cheese is melted and the tortillas are crispy.
  11. Serve the burritos hot with dollops of sour cream, salsa, and topped with shredded lettuce, diced tomatoes, sliced avocado, and chopped cilantro.
