Ca Kho to

Ca Kho To is a traditional Vietnamese dish made with caramelized fish in a clay pot.

Ingredients

  • Cooking oil (2 tablespoons)
  • Cilantro (1/4 cup, chopped)
  • Green onions (2, chopped)
  • Water (1/2 cup)
  • Black pepper (1/2 teaspoon)
  • Shallots (2, thinly sliced)
  • Garlic (4 cloves, minced)
  • Sugar (2 tablespoons)
  • Fish sauce (3 tablespoons)
  • Fish fillets (4 pieces)

Instructions

  1. In a small bowl, mix together fish sauce, sugar, minced garlic, and black pepper.
  2. Marinate the fish fillets in the mixture for 15 minutes.
  3. Heat cooking oil in a clay pot or a deep skillet over medium heat.
  4. Add the sliced shallots and cook until fragrant.
  5. Place the marinated fish fillets in the pot, skin side down.
  6. Pour the remaining marinade over the fish.
  7. Add water to the pot, cover, and simmer for 30 minutes, or until the fish is cooked and the sauce has thickened.
  8. Garnish with chopped green onions and cilantro.
  9. Serve hot with steamed rice.
