
Ca Kho to
Ca Kho To is a traditional Vietnamese dish made with caramelized fish in a clay pot.
Ingredients
- Cooking oil (2 tablespoons)
- Cilantro (1/4 cup, chopped)
- Green onions (2, chopped)
- Water (1/2 cup)
- Black pepper (1/2 teaspoon)
- Shallots (2, thinly sliced)
- Garlic (4 cloves, minced)
- Sugar (2 tablespoons)
- Fish sauce (3 tablespoons)
- Fish fillets (4 pieces)
Instructions
- In a small bowl, mix together fish sauce, sugar, minced garlic, and black pepper.
- Marinate the fish fillets in the mixture for 15 minutes.
- Heat cooking oil in a clay pot or a deep skillet over medium heat.
- Add the sliced shallots and cook until fragrant.
- Place the marinated fish fillets in the pot, skin side down.
- Pour the remaining marinade over the fish.
- Add water to the pot, cover, and simmer for 30 minutes, or until the fish is cooked and the sauce has thickened.
- Garnish with chopped green onions and cilantro.
- Serve hot with steamed rice.
