Cabbage and Broccoli Slaw

This refreshing and crunchy slaw is made with cabbage, broccoli, and a tangy dressing.

Ingredients

  • Salt and pepper (to taste)
  • Dijon mustard (1 teaspoon)
  • Honey (1 tablespoon)
  • Apple cider vinegar (2 tablespoons)
  • Greek yogurt (1/4 cup)
  • Mayonnaise (1/2 cup)
  • Red onion (1/4 cup, thinly sliced)
  • Carrots (2 medium, grated)
  • Broccoli florets (2 cups, chopped)
  • Green cabbage (1/2 head, shredded)

Instructions

  1. In a large bowl, combine the shredded cabbage, chopped broccoli, grated carrots, and sliced red onion.
  2. In a separate small bowl, whisk together the mayonnaise, Greek yogurt, apple cider vinegar, honey, Dijon mustard, salt, and pepper.
  3. Pour the dressing over the cabbage and broccoli mixture and toss until well coated.
  4. Cover and refrigerate for at least 1 hour before serving to allow the flavors to meld together.
  5. Serve chilled and enjoy!
