
Cabbage and Broccoli Slaw
This refreshing and crunchy slaw is made with cabbage, broccoli, and a tangy dressing.
Ingredients
- Salt and pepper (to taste)
- Dijon mustard (1 teaspoon)
- Honey (1 tablespoon)
- Apple cider vinegar (2 tablespoons)
- Greek yogurt (1/4 cup)
- Mayonnaise (1/2 cup)
- Red onion (1/4 cup, thinly sliced)
- Carrots (2 medium, grated)
- Broccoli florets (2 cups, chopped)
- Green cabbage (1/2 head, shredded)
Instructions
- In a large bowl, combine the shredded cabbage, chopped broccoli, grated carrots, and sliced red onion.
- In a separate small bowl, whisk together the mayonnaise, Greek yogurt, apple cider vinegar, honey, Dijon mustard, salt, and pepper.
- Pour the dressing over the cabbage and broccoli mixture and toss until well coated.
- Cover and refrigerate for at least 1 hour before serving to allow the flavors to meld together.
