Instructions
- In a large mixing bowl, combine the finely shredded cabbage, grated carrots, thinly sliced red onion, and finely chopped parsley.
- In a separate smaller bowl, prepare the dressing. Whisk together the mayonnaise, Greek yogurt, apple cider vinegar, honey, Dijon mustard, salt, and pepper until smooth and well-blended.
- Gradually pour the creamy dressing over the cabbage mixture. Toss everything together until all the vegetables are well coated with the dressing.
- Cover the slaw and allow it to refrigerate for at least 1 hour. This resting time allows the flavors to meld together, resulting in a more robust taste.
- Before serving, give the slaw another quick toss to redistribute the dressing. Serve it chilled and enjoy this refreshing side dish!
Tips
- For a vegan variation, substitute the mayonnaise and Greek yogurt with vegan alternatives.
- You can also add other vegetables like bell peppers or radishes for more color and crunch.
- The slaw can be prepared a day in advance, making it a perfect make-ahead dish for picnics or barbecues.
