- Cumin (1/2 teaspoon)
- Olive oil (2 tablespoons)
- Garlic (2 cloves, minced)
- Onion (1, finely chopped)
- Red bell pepper (1, diced)
- Corn kernels (1 cup, fresh or frozen)
- Cabbage (2 cups, shredded)
Instructions
- Heat the olive oil in a large skillet over medium heat.
- Add the onion and garlic to the skillet, sautéing until fragrant, about 2 minutes.
- Add the cabbage, corn, red bell pepper, cumin, chili powder, salt, and pepper to the skillet. Continue to cook, stirring frequently, until the cabbage is wilted and the vegetables are tender, about 8-10 minutes. Once done, remove the skillet from the heat and set aside.
- In a separate skillet heated over medium heat, place a tortilla and sprinkle one half with shredded cheese.
- Place a generous spoonful of the cabbage and corn mixture onto the same half of the tortilla sprinkled with cheese.
- Fold the tortilla in half to create a half-moon-shaped quesadilla.
