Ingredients

Salt

Black pepper
1/4 teaspoon or to taste
Honey
2 tablespoons
Olive oil
1/4 cup
Lime juice
juice of 2 limes
Fresh cilantro
1/4 cup, chopped
Red onion
1 small, thinly sliced
Carrot
1 large, grated
Red bell pepper
1, diced
Corn kernels
1 cup, fresh or frozen
Green cabbage
1/2 head, shredded

Instructions

  1. Prepare all your vegetables - shred the cabbage, dice the red bell pepper, grate the carrot, thinly slice the red onion, and chop the cilantro.
  2. In a large bowl, combine the prepared vegetables with the corn kernels.
  3. To make the dressing, in a separate small bowl, whisk together the lime juice, olive oil, honey, salt, and black pepper until well combined.
  4. Pour the dressing over the salad ingredients in the large bowl. Toss well to ensure every bit of the salad is coated.
