Ingredients
- Salt

- Black pepper

- Honey
- 2 tablespoons
- Olive oil
- 1/4 cup
- Lime juice
- juice of 2 limes
- Fresh cilantro
- 1/4 cup, chopped
- Red onion
- 1 small, thinly sliced
- Carrot
- 1 large, grated
- Red bell pepper
- 1, diced
- Corn kernels
- 1 cup, fresh or frozen
- Green cabbage
- 1/2 head, shredded
Instructions
- Prepare all your vegetables - shred the cabbage, dice the red bell pepper, grate the carrot, thinly slice the red onion, and chop the cilantro.
- In a large bowl, combine the prepared vegetables with the corn kernels.
- To make the dressing, in a separate small bowl, whisk together the lime juice, olive oil, honey, salt, and black pepper until well combined.
- Pour the dressing over the salad ingredients in the large bowl. Toss well to ensure every bit of the salad is coated.
- Cover the salad and refrigerate for at least 30 minutes. This allows the flavors to meld together for a more intense taste.
