Green cabbage
2 cups, shredded
Red cabbage
2 cups, shredded
Carrots
1 cup, grated
Red bell pepper
1, sliced
Feta cheese
1 cup, crumbled
Fresh parsley
1/2 cup, chopped
Olive oil
1/4 cup
Lemon juice
2 tablespoons
Salt
to taste
Black pepper
to taste

Instructions

  1. In a large bowl, combine the shredded green cabbage, shredded red cabbage, grated carrots, and sliced red bell pepper. Toss gently to combine.
  2. In a small bowl, whisk together the lemon juice, olive oil, salt, and black pepper until well blended. This will be your dressing.
  3. Pour the dressing over the cabbage mixture and toss to coat all the ingredients evenly.
  4. Add the crumbled feta cheese and chopped parsley to the salad. Gently toss again to combine, being careful not to break up the feta too much.
  5. Serve the salad chilled, and enjoy the refreshing crunch!
