Hearty Cabbage and Kielbasa Soup
A cozy, heartwarming bowl of this Cabbage and Kielbasa Soup is all you need on a cold day. This traditional Eastern European dish combines the smokiness of kielbasa sausage, the crunchiness of cabbage and carrots, and the softness of potatoes in a flavorful chicken broth. Ingredients
- 1/4 cup, chopped Fresh parsley
- to taste Salt and black pepper
- 1 Bay leaf
- 1/2 teaspoon Dried thyme
- 8 cups Chicken broth
- 3 medium, diced Potatoes
- 2 medium, sliced Carrots
- 1/2 head, shredded Cabbage
- 3 cloves, minced Garlic
- 1 large, chopped Onion
- 1 pound, sliced Kielbasa sausage

Instructions
- In a large pot, brown the sliced kielbasa sausage over medium heat. Once browned, remove the sausage from the pot and set aside on a plate.
- In the same pot, add the chopped onion and minced garlic, sautéing until the onion becomes translucent and the garlic is fragrant.
- Next, add the shredded cabbage, sliced carrots, and diced potatoes to the pot. Stir well to combine with the onion and garlic.
- Pour in the chicken broth. Add the dried thyme, bay leaf, and season with salt and black pepper. Stir everything together and bring the mixture to a boil.
- Once boiling, reduce the heat to low. Cover the pot and let it simmer for about 30 minutes, or until the vegetables are tender.
- Return the cooked kielbasa sausage back to the pot. Let it simmer for an additional 5 minutes to warm through.
- Before serving, remove and discard the bay leaf. Taste and adjust the seasoning if needed.
- Serve the soup hot, garnished with a generous sprinkle of fresh chopped parsley.
Tips
- For a vegetarian version, omit the kielbasa and use vegetable broth instead of chicken broth. You can also add other vegetables like bell pepper or zucchini for added nutrition.
