Instructions
- In a large pot, heat the oil over medium heat. Add the sliced pork and cook until browned on all sides, about 5-7 minutes. Remove the pork from the pot and set aside.
- In the same pot, add the chopped onion, minced garlic, and ginger. Sauté for 2-3 minutes until fragrant and the onion is translucent.
- Add the chopped cabbage and sliced carrots to the pot. Cook for an additional 5 minutes, stirring occasionally, until the vegetables are slightly softened.
- Pour in the chicken broth, soy sauce, and fish sauce. Bring the mixture to a boil, then reduce the heat to low and let it simmer for 20 minutes to allow the flavors to meld together.
- While the soup simmers, cook the rice noodles according to the package instructions. Drain and set aside.
- Return the browned pork slices to the pot and simmer for an additional 5 minutes to heat through.
- To serve, divide the cooked rice noodles among bowls. Ladle the flavorful soup over the noodles.
- Garnish each bowl with chopped green onions and cilantro. Serve with lime wedges on the side for an extra burst of freshness.
