
Cabbage and Sweet Potato Hash
This hearty and flavorful cabbage and sweet potato hash is a delicious and nutritious side dish.
Ingredients
- Fresh parsley (2 tablespoons, chopped)
- Salt and pepper (to taste)
- Paprika (1 teaspoon)
- Olive oil (2 tablespoons)
- Garlic (2 cloves, minced)
- Onion (1 medium, diced)
- Cabbage (1/2 small head, thinly sliced)
- Sweet potatoes (2 medium, peeled and diced)
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add the diced sweet potatoes and cook for 5 minutes, stirring occasionally.
- Add the diced onion and minced garlic to the skillet and cook for another 5 minutes, until the onions are translucent.
- Add the sliced cabbage to the skillet and cook for 8-10 minutes, until the cabbage is tender.
- Sprinkle paprika, salt, and pepper over the hash and stir to combine.
- Cook for an additional 2 minutes to allow the flavors to meld together.
- Remove from heat and garnish with fresh parsley before serving.
