Cabbage Soup

This hearty cabbage soup is packed with vegetables and flavors. It's a perfect comforting dish for a cold day.

Ingredients

  • Salt and pepper (to taste)
  • Thyme (1 teaspoon)
  • Bay leaf (1)
  • Tomatoes (1 can (14 oz), diced)
  • Vegetable broth (6 cups)
  • Potatoes (2, peeled and diced)
  • Cabbage (1/2 head, shredded)
  • Garlic (3 cloves, minced)
  • Celery (2 stalks, sliced)
  • Carrots (2, sliced)
  • Onion (1, diced)
  • Olive oil (2 tablespoons)

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onion, carrots, celery, and garlic. Cook until the vegetables are softened, about 5 minutes.
  3. Add the cabbage, potatoes, vegetable broth, tomatoes, bay leaf, thyme, salt, and pepper. Bring to a boil.
  4. Reduce the heat and simmer for 30 minutes, or until the vegetables are tender.
  5. Remove the bay leaf before serving.
  6. Serve hot and enjoy!
