Ingredients

Olive oil
2 tablespoons
Onion

Carrots

Celery
2 stalks, chopped
Garlic
3 cloves, minced
Cabbage
1/2 head, chopped
Potatoes
2, diced
Canned tomatoes
1 (14.5 oz) can, diced
Vegetable broth
6 cups
Bay leaf
1
Dried thyme
1 teaspoon
Salt
to taste
Black pepper
to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the diced onion, sliced carrots, chopped celery, and minced garlic. Sauté for about 5 minutes, or until the vegetables have softened and the onion is translucent.
  3. Stir in the chopped cabbage and diced potatoes, cooking for an additional 5 minutes until the cabbage begins to wilt.
  4. Pour in the vegetable broth and add the diced tomatoes, bay leaf, dried thyme, salt, and pepper. Bring the mixture to a boil.
  5. Once boiling, reduce the heat to low and let it simmer for 30 minutes, or until the vegetables are tender and the flavors meld beautifully.
  6. Before serving, remove the bay leaf. Taste and adjust seasoning with more salt and pepper if desired.
