
Cabbage Soup
This hearty cabbage soup is packed with vegetables and flavors. It's a perfect comforting dish for a cold day.
Ingredients
- Salt and pepper (to taste)
- Thyme (1 teaspoon)
- Bay leaf (1)
- Tomatoes (1 can (14 oz), diced)
- Vegetable broth (6 cups)
- Potatoes (2, peeled and diced)
- Cabbage (1/2 head, shredded)
- Garlic (3 cloves, minced)
- Celery (2 stalks, sliced)
- Carrots (2, sliced)
- Onion (1, diced)
- Olive oil (2 tablespoons)
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the onion, carrots, celery, and garlic. Cook until the vegetables are softened, about 5 minutes.
- Add the cabbage, potatoes, vegetable broth, tomatoes, bay leaf, thyme, salt, and pepper. Bring to a boil.
- Reduce the heat and simmer for 30 minutes, or until the vegetables are tender.
- Remove the bay leaf before serving.
- Serve hot and enjoy!
