Ingredients
- Olive oil
- 2 tablespoons
- Onion
- 1, diced
- Carrots
- 2, sliced
- Celery
- 2 stalks, chopped
- Garlic
- 3 cloves, minced
- Cabbage
- 1/2 head, chopped
- Potatoes
- 2, diced
- Canned tomatoes
- 1 (14.5 oz) can, diced
- Vegetable broth
- 6 cups
- Bay leaf
- 1
- Dried thyme
- 1 teaspoon
- Salt
- to taste
- Black pepper
- to taste
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the diced onion, sliced carrots, chopped celery, and minced garlic. Sauté for about 5 minutes, or until the vegetables have softened and the onion is translucent.
- Stir in the chopped cabbage and diced potatoes, cooking for an additional 5 minutes until the cabbage begins to wilt.
- Pour in the vegetable broth and add the diced tomatoes, bay leaf, dried thyme, salt, and pepper. Bring the mixture to a boil.
- Once boiling, reduce the heat to low and let it simmer for 30 minutes, or until the vegetables are tender and the flavors meld beautifully.
- Before serving, remove the bay leaf. Taste and adjust seasoning with more salt and pepper if desired.
- Serve hot, garnished with fresh herbs if you like, and enjoy the warmth it brings!
