- Green chilies

- Curry leaves
- 10-12 fresh leaves
- Mustard seeds
- 1 teaspoon
- Grated coconut
- 1/2 cup, fresh
- Cabbage
- 4 cups, finely chopped
Instructions
- In a large pan, heat the coconut oil over medium heat. Once hot, add the mustard seeds and allow them to splutter, releasing their nutty aroma.
- Quickly add the curry leaves and slit green chilies to the pan, sautéing for about 30 seconds until fragrant.
- Add the finely chopped cabbage to the pan and stir well to combine with the spices, ensuring the cabbage is well-coated.
- Sprinkle in the turmeric powder and salt. Mix thoroughly, then cover the pan with a lid. Let it cook on low flame for about 10 minutes, stirring occasionally to prevent sticking.
- After 10 minutes, remove the lid and add the freshly grated coconut. Mix well and continue to cook uncovered for an additional 5 minutes, allowing the flavors to meld beautifully.
- Taste the dish and adjust salt if necessary. Serve the Cabbage Thoran hot as a delicious side dish with steamed rice or chapati.
