Cactus Salad

This refreshing cactus salad is made with fresh nopales (cactus paddles), tomatoes, onions, and cilantro.

Ingredients

  • Black pepper (to taste)
  • Salt (to taste)
  • Olive oil (1 tablespoon)
  • Lime juice (2 tablespoons)
  • Cilantro (1/4 cup, chopped)
  • Red onion (1/2 small, thinly sliced)
  • Tomatoes (2 medium, diced)
  • Nopales (cactus paddles) (2 cups, cleaned and diced)

Instructions

  1. Bring a pot of water to a boil. Add the diced nopales and cook for 5 minutes. Drain and rinse with cold water.
  2. In a large bowl, combine the cooked nopales, diced tomatoes, sliced red onion, and chopped cilantro.
  3. In a small bowl, whisk together the lime juice, olive oil, salt, and black pepper.
  4. Pour the dressing over the salad and toss to combine.
  5. Refrigerate for at least 1 hour to allow the flavors to meld.
  6. Serve chilled and enjoy!
