Potatoes
4 medium, diced
Olive oil
3 tablespoons
Cajun seasoning
2 tablespoons
Bell pepper
1 medium, diced (any color)
Onion
1 medium, diced
Garlic
3 cloves, minced
Salt
to taste
Pepper
to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss the diced potatoes with olive oil and Cajun seasoning until they are well coated.
  3. Spread the seasoned potatoes out on a baking sheet in a single layer for even cooking.
  4. Bake in the preheated oven for 20 minutes, or until the potatoes are crispy and golden brown, flipping them halfway through for even crispiness.
  5. While the potatoes are baking, heat a tablespoon of olive oil in a skillet over medium heat.
  6. Add the minced garlic, diced onion, and bell pepper to the skillet. Sauté until they are soft and fragrant, about 5-7 minutes.
  7. Once the potatoes are done, add them to the skillet with the sautéed vegetables. Stir everything together gently to combine.
  8. Season with salt and pepper to taste, and cook for an additional 2-3 minutes to heat through.
  9. Serve your Cajun breakfast potatoes hot, garnished with fresh herbs if desired, alongside eggs or your favorite breakfast protein.
