Ingredients

Macaroni
8 ounces
Unsalted butter
4 tablespoons
All-purpose flour
1/4 cup
Milk
2 cups, whole or 2%
Monterey Jack cheese
1 1/2 cups, shredded
Cheddar cheese
1 1/2 cups, shredded
Cajun seasoning
2 tablespoons
Salt
1 teaspoon
Black pepper
1/2 teaspoon
Green onions
1/4 cup, sliced
Breadcrumbs
1 cup, for topping
Paprika
1 tablespoon (for extra flavor and color)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large pot, bring salted water to a boil and cook the macaroni according to package instructions until al dente. Drain and set aside.
  3. In the same pot over medium heat, melt the butter. Once melted, whisk in the flour and cook for about 2 minutes until smooth and bubbly, creating a roux.
  4. Gradually whisk in the milk, stirring constantly. Bring the mixture to a gentle boil, then reduce the heat and simmer for about 5 minutes until the sauce thickens, stirring frequently.
  5. Remove the pot from heat and stir in the Monterey Jack and cheddar cheeses, Cajun seasoning, salt, black pepper, and paprika until the cheeses are melted and the sauce is creamy.
  6. Add the cooked macaroni and sliced green onions to the cheese sauce, stirring until the pasta is well coated.
  7. Transfer the macaroni and cheese to a greased 9x13-inch baking dish. Evenly sprinkle the breadcrumbs on top.
