Ingredients

Olive oil
2 tablespoons
Andouille sausage
1 pound, sliced
Bell peppers
2, seeded and sliced
Onion
1 large, chopped
Garlic
2 cloves, minced
Cajun seasoning
2 tablespoons
Chicken broth
1 cup
Heavy cream
1 cup
Penne pasta
1 pound
Parmesan cheese
1 cup, grated
Green onions
1/2 cup, chopped
Salt and pepper
to taste

Instructions

  1. Bring a large pot of salted water to a boil. Add the penne pasta and cook until al dente, according to package instructions. Drain and set aside.
  2. Meanwhile, heat the olive oil in a large skillet over medium heat. Add the andouille sausage and cook until browned on both sides, about 5 minutes.
  3. Add the bell peppers, onion, and minced garlic to the skillet. Sauté until the vegetables are tender and the onions are translucent, about 5 minutes.
  4. Sprinkle the Cajun seasoning over the sausage and vegetables, stirring well to ensure everything is evenly coated.
  5. Pour in the chicken broth and heavy cream, stirring to combine. Bring the mixture to a simmer and let it cook for about 5 minutes or until the sauce has thickened slightly.
  6. Add the cooked penne pasta to the skillet and toss to combine, ensuring the pasta is well coated in the sauce.
  7. Stir in the grated Parmesan cheese and chopped green onions. Season with salt and pepper to taste.
