- Olive oil
- 2 tablespoons
- Andouille sausage
- 1 pound, sliced
- Bell peppers
- 2, seeded and sliced
- Onion
- 1 large, chopped
- Garlic
- 2 cloves, minced
- Cajun seasoning
- 2 tablespoons
- Chicken broth
- 1 cup
- Heavy cream
- 1 cup
- Penne pasta
- 1 pound
- Parmesan cheese
- 1 cup, grated
- Green onions
- 1/2 cup, chopped
- Salt and pepper

Instructions
- Bring a large pot of salted water to a boil. Add the penne pasta and cook until al dente, according to package instructions. Drain and set aside.
- Meanwhile, heat the olive oil in a large skillet over medium heat. Add the andouille sausage and cook until browned on both sides, about 5 minutes.
- Add the bell peppers, onion, and minced garlic to the skillet. Sauté until the vegetables are tender and the onions are translucent, about 5 minutes.
- Sprinkle the Cajun seasoning over the sausage and vegetables, stirring well to ensure everything is evenly coated.
- Pour in the chicken broth and heavy cream, stirring to combine. Bring the mixture to a simmer and let it cook for about 5 minutes or until the sauce has thickened slightly.
- Add the cooked penne pasta to the skillet and toss to combine, ensuring the pasta is well coated in the sauce.
- Stir in the grated Parmesan cheese and chopped green onions. Season with salt and pepper to taste.
