Ingredients

Potatoes
4 medium, grated
Olive oil
4 tablespoons
Cajun seasoning
2 tablespoons
Salt
1 teaspoon
Black pepper

Instructions

  1. Begin by peeling and grating the potatoes. Place the grated potatoes in a clean kitchen towel and squeeze out as much liquid as possible to ensure crispy hashbrowns.
  2. In a large mixing bowl, combine the drained potatoes, Cajun seasoning, salt, and black pepper. Mix thoroughly until the potatoes are well-coated with spices.
  3. Heat the olive oil in a large skillet over medium heat. Ensure the oil is hot before adding the potato mixture.
  4. Add the potato mixture to the skillet, spreading it evenly. Press it down firmly with a spatula to create a compact layer.
  5. Cook for about 10 minutes, or until the bottom layer is crispy and golden brown. Keep an eye on it to prevent burning.
  6. Carefully flip the hashbrowns using a large spatula, or by inverting onto a plate and sliding back into the skillet. Cook for another 10 minutes, or until the second side is crispy and golden.
  7. Once done, remove from the skillet and let them rest on a paper towel to absorb excess oil. Serve hot, garnished with fresh herbs if desired.
