Instructions
- Begin by peeling and grating the potatoes. Place the grated potatoes in a clean kitchen towel and squeeze out as much liquid as possible to ensure crispy hashbrowns.
- In a large mixing bowl, combine the drained potatoes, Cajun seasoning, salt, and black pepper. Mix thoroughly until the potatoes are well-coated with spices.
- Heat the olive oil in a large skillet over medium heat. Ensure the oil is hot before adding the potato mixture.
- Add the potato mixture to the skillet, spreading it evenly. Press it down firmly with a spatula to create a compact layer.
- Cook for about 10 minutes, or until the bottom layer is crispy and golden brown. Keep an eye on it to prevent burning.
- Carefully flip the hashbrowns using a large spatula, or by inverting onto a plate and sliding back into the skillet. Cook for another 10 minutes, or until the second side is crispy and golden.
- Once done, remove from the skillet and let them rest on a paper towel to absorb excess oil. Serve hot, garnished with fresh herbs if desired.
