Calamari Alla Griglia

Calamari Alla Griglia is a beloved Italian dish that captures the essence of summer dining with its vibrant flavors and smoky aroma. Tender rings of squid are marinated to perfection in a zesty mixture of olive oil, garlic, and fresh herbs, then grilled to achieve a delightful char. This dish not only tantalizes the palate but also evokes the coastal charm of Italy, where fresh seafood is a staple. Perfect as an appetizer or a main course, serve it alongside crusty bread and a glass of white wine for an unforgettable dining experience.

Serves 4

Ingredients

Fresh squid
1 pound, cleaned and cut into rings
Olive oil
1/4 cup
Lemon juice
2 tablespoons, freshly squeezed
Garlic
3 cloves, minced
Fresh parsley
1/4 cup, finely chopped
Salt
1 teaspoon
Black pepper
1/2 teaspoon, freshly ground
Lemon wedges
for serving

Instructions

  1. Preheat your grill to medium-high heat.
  2. In a large bowl, whisk together the olive oil, lemon juice, minced garlic, chopped parsley, salt, and pepper until well combined.
  3. Add the cleaned squid rings to the bowl and toss gently to ensure they are thoroughly coated in the marinade. Let the squid marinate for at least 15 minutes to absorb the flavors.
  4. Thread the marinated squid rings onto skewers, leaving a little space between each ring for even cooking.
  5. Place the skewers on the grill and cook for 2-3 minutes on each side, or until the squid is opaque and has beautiful grill marks. Be careful not to overcook, as it can become rubbery.
  6. Remove the calamari from the grill and transfer to a serving platter. Garnish with extra parsley and serve immediately with lemon wedges for squeezing.

Tips

  • 💡 For added flavor, consider adding red pepper flakes to the marinade for a spicy kick.
  • 💡 If you prefer a smoky flavor, you can use a charcoal grill or add wood chips to your gas grill.
  • 💡 Experiment with different herbs, such as basil or oregano, to create your own signature flavor.
