Instructions
- In a large pot, heat the olive oil over medium heat. Once hot, add the diced onion and minced garlic, cooking until the onion is soft and translucent, about 5 minutes.
- Add the diced potatoes to the pot and cook for an additional 5 minutes, stirring occasionally.
- Pour in the chicken or vegetable broth and bring to a boil, allowing the flavors to meld.
- Once boiling, reduce the heat to low and let the soup simmer for 15-20 minutes, or until the potatoes are fork-tender.
- Using a potato masher or an immersion blender, partially mash the potatoes in the soup to thicken it while still leaving some texture.
- Stir in the chopped kale and sliced sausage, allowing the soup to simmer for another 5 minutes, or until the kale is wilted and the sausage is heated through.
- Season with salt and pepper to taste. For an added depth of flavor, consider incorporating a pinch of smoked paprika.
- Serve hot with a drizzle of good quality olive oil on top, and enjoy this comforting bowl of Caldo Verde!
Tips
- For a vegetarian version, simply omit the sausage and use vegetable broth.
- Feel free to customize the soup by adding other vegetables, such as carrots or bell peppers.
- Serve with crusty bread for a hearty meal.
