This vibrant green soup, brimming with nutrient-rich kale, creamy potatoes, and savory chorizo or linguica sausage, has its roots in the northern regions of Portugal, particularly in the Minho province. Ingredients

Olive oil
2 tablespoons
Onion
1 large, diced
Garlic
3 cloves, minced
Potatoes
3 medium, peeled and diced
Chicken or vegetable broth
6 cups
Kale
4 cups, chopped
Chorizo or linguica sausage
1 cup, sliced
Salt
to taste
Pepper
to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat. Once hot, add the diced onion and minced garlic, cooking until the onion is soft and translucent, about 5 minutes.
  2. Add the diced potatoes to the pot and cook for an additional 5 minutes, stirring occasionally.
  3. Pour in the chicken or vegetable broth and bring to a boil, allowing the flavors to meld.
  4. Once boiling, reduce the heat to low and let the soup simmer for 15-20 minutes, or until the potatoes are fork-tender.
  5. Using a potato masher or an immersion blender, partially mash the potatoes in the soup to thicken it while still leaving some texture.
  6. Stir in the chopped kale and sliced sausage, allowing the soup to simmer for another 5 minutes, or until the kale is wilted and the sausage is heated through.
  7. Season with salt and pepper to taste. For an added depth of flavor, consider incorporating a pinch of smoked paprika.
