Calimocho Coffee Cooler
This recipe brings a unique twist to your typical coffee cooler. Originating from the Basque Region in Spain, Calimocho is traditionally a mix of red wine and cola. In this recipe, however, we replace the cola with a strong brew of coffee. The result is a sophisticated, refreshing drink that's both deliciously winey and invigoratingly caffeinated. It is perfect for those warm summer afternoons when you need a little pick-me-up.

Instructions
- Brew a strong cup of coffee and refrigerate until chilled.
- In a pitcher, combine the chilled coffee, red wine, and simple syrup. Stir well to ensure the simple syrup is fully dissolved.
- Taste the mixture and adjust the sweetness to your liking by adding more simple syrup if needed.
- Fill two glasses with ice cubes.
- Pour the coffee-wine mixture over the ice cubes, filling the glasses to about three-quarters full.
- Garnish each glass with a slice of lemon and a few mint leaves. The mint and lemon will provide a refreshing contrast to the rich flavors of the coffee and wine.
- Serve immediately and enjoy this invigorating take on a Spanish classic.
Tips
- If you'd like a non-alcoholic version of this drink, replace the red wine with grape juice.
- For a stronger coffee flavor, use cold brew coffee instead of regular brewed coffee.
- For a fun twist, freeze coffee into ice cubes and use these instead of regular ice cubes. As they melt, they will add even more coffee flavor to the drink.
