This recipe brings a unique twist to your typical coffee cooler. Originating from the Basque Region in Spain, Calimocho is traditionally a mix of red wine and cola. In this recipe, however, we replace the cola with a strong brew of coffee. The result is a sophisticated, refreshing drink that's both deliciously winey and invigoratingly caffeinated. Ingredients

Original recipe serves 2

Mint leaves
a handful, for garnish
Lemon
1, sliced for garnish
Ice cubes
as needed
Simple syrup
2 tablespoons, or to taste
Red wine
1 cup, preferably a spanish variety
Strong brewed coffee
1 cup, chilled

Instructions

  1. Brew a strong cup of coffee and refrigerate until chilled.
  2. In a pitcher, combine the chilled coffee, red wine, and simple syrup. Stir well to ensure the simple syrup is fully dissolved.
  3. Taste the mixture and adjust the sweetness to your liking by adding more simple syrup if needed.
  4. Fill two glasses with ice cubes.
  5. Pour the coffee-wine mixture over the ice cubes, filling the glasses to about three-quarters full.
  6. Garnish each glass with a slice of lemon and a few mint leaves. The mint and lemon will provide a refreshing contrast to the rich flavors of the coffee and wine.
  7. Serve immediately and enjoy this invigorating take on a Spanish classic.
