Calissons
Experience a taste of Provence with these traditional French Calissons. This delicacy, often enjoyed during celebrations, carries a harmonious blend of finely ground almonds and candied melon, creating a rich, fruity paste that is as smooth as it is luscious. Topped with a thin layer of crisp royal icing, these candies are a delightful contrast of textures. Ingredients
- 1 cup Candied melon
- 1 cup Ground almonds
- 1/2 cup Icing sugar
- 1 teaspoon Orange flower water
- 1/2 teaspoon Almond extract
- 1/4 cup Granulated sugar
- 1 Egg white

Instructions
- In a food processor, blend the candied melon until it reaches a smooth consistency.
- Add the ground almonds and icing sugar to the food processor and continue to blend until the ingredients are well combined.
- Add the orange flower water and almond extract to the mixture, blending until a smooth paste is formed.
- Roll out the paste between two sheets of parchment paper until it is about 1 cm thick.
- Use a calisson cutter or a small cookie cutter to cut out your desired shapes from the paste.
- Preheat your oven to 120°C (250°F).
- In a separate bowl, whisk the egg white until it becomes frothy. Gradually add the granulated sugar, continuing to whisk until the mixture forms stiff peaks. This is your royal icing.
- Spread a thin layer of the royal icing over the top of each calisson.
- Bake the calissons for 15 minutes, or until the icing sets and turns slightly golden.
- Allow the calissons to cool completely before serving. Enjoy this sweet taste of French tradition!

- For a more authentic flavor, use traditional Provence candied melon if you can find it.
