
Canadian Rockies Roast
This Canadian Rockies Roast is a hearty and flavorful beef roast seasoned with Canadian-inspired spices.
Ingredients
- Olive oil (2 tablespoons)
- Black pepper (1/2 teaspoon)
- Salt (1 teaspoon)
- Smoked paprika (1 tablespoon)
- Onion powder (1 tablespoon)
- Garlic powder (1 tablespoon)
- Worcestershire sauce (2 tablespoons)
- Dijon mustard (2 tablespoons)
- Maple syrup (1/4 cup)
- Beef roast (3 pounds)
Instructions
- Preheat the oven to 325°F.
- In a small bowl, mix together the maple syrup, Dijon mustard, Worcestershire sauce, garlic powder, onion powder, smoked paprika, salt, and black pepper to create a marinade.
- Place the beef roast in a roasting pan and pour the marinade over it, making sure to coat all sides.
- Cover the roasting pan with foil and let the roast marinate in the refrigerator for at least 1 hour, or overnight for maximum flavor.
- Remove the roast from the refrigerator and let it come to room temperature for about 30 minutes.
- Heat olive oil in a large skillet over medium-high heat. Sear the roast on all sides until browned, about 3-4 minutes per side.
- Transfer the roast back to the roasting pan and place it in the preheated oven.
- Roast for about 2.5-3 hours, or until the internal temperature reaches your desired level of doneness (145°F for medium-rare, 160°F for medium, 170°F for well-done).
- Remove the roast from the oven and let it rest for 10-15 minutes before slicing.
