Servings: 6-8

Ingredients

Beef roast
3-4 pounds
Olive oil
2 tablespoons
Black pepper
1 teaspoon
Salt
1 teaspoon
Smoked paprika
2 teaspoons
Onion powder
1 teaspoon
Garlic powder
1 teaspoon
Worcestershire sauce
3 tablespoons
Dijon mustard
2 tablespoons
Maple syrup
2 tablespoons

Instructions

  1. Preheat the oven to 325°F (165°C).
  2. In a small bowl, whisk together the maple syrup, Dijon mustard, Worcestershire sauce, garlic powder, onion powder, smoked paprika, salt, and black pepper to create a robust marinade.
  3. Place the beef roast in a roasting pan and generously pour the marinade over it, ensuring all sides are evenly coated. For best results, let the roast marinate in the refrigerator for at least 1 hour, or overnight for maximum flavor.
  4. Remove the roast from the refrigerator and allow it to sit at room temperature for about 30 minutes before cooking.
  5. Heat olive oil in a large skillet over medium-high heat. Sear the roast on all sides until it is beautifully browned, about 3-4 minutes per side.
  6. Transfer the roast back to the roasting pan and place it in the preheated oven.
  7. Roast for about 2.5-3 hours, or until the internal temperature reaches your desired level of doneness: 145°F (medium-rare), 160°F (medium), or 170°F (well-done).
  8. Once cooked, remove the roast from the oven and let it rest for 10-15 minutes before slicing to allow the juices to redistribute.
  9. Serve your Canadian Rockies Roast with your favorite side dishes, such as roasted vegetables, mashed potatoes, or a fresh salad, and enjoy a taste of Canadian heritage.
