Ingredients
- All-purpose flour
- 2 cups, plus more for dusting
- Powdered sugar
- 3/4 cup, plus extra for dusting
- Salt
- 1/4 teaspoon
- Lemon zest
- 1 tablespoon, freshly grated
- Vanilla extract
- 1 teaspoon
- Egg yolks
- 3 large
- Unsalted butter
- 1 cup (2 sticks), softened
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, whisk together the all-purpose flour, powdered sugar, and salt until well combined.
- Add the softened unsalted butter, egg yolks, vanilla extract, and lemon zest to the flour mixture. Mix with a wooden spoon or your hands until a smooth dough forms.
- Lightly flour a clean surface and roll out the dough to about 1/2 inch thickness.
- Using a flower-shaped cookie cutter, cut out the cookies and place them on the prepared baking sheet, leaving some space between each cookie.
- Bake in the preheated oven for 15 minutes, or until the edges are lightly golden and the cookies are firm to the touch.
- Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
