Powdered sugar
3/4 cup, plus extra for dusting
Salt
1/4 teaspoon
Lemon zest
1 tablespoon, freshly grated
Vanilla extract
1 teaspoon
Egg yolks
3 large
Unsalted butter
1 cup (2 sticks), softened

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the all-purpose flour, powdered sugar, and salt until well combined.
  3. Add the softened unsalted butter, egg yolks, vanilla extract, and lemon zest to the flour mixture. Mix with a wooden spoon or your hands until a smooth dough forms.
  4. Lightly flour a clean surface and roll out the dough to about 1/2 inch thickness.
  5. Using a flower-shaped cookie cutter, cut out the cookies and place them on the prepared baking sheet, leaving some space between each cookie.
