Ingredients

Original recipe serves 24

Cape gooseberries
4 cups, husked and washed
Granulated sugar
2 cups
Water
1 cup
Lemon juice
1 tablespoon, freshly squeezed

Instructions

  1. Prepare your Cape gooseberries by removing the husks and washing them thoroughly.
  2. In a large heavy-bottomed pot, combine the prepared Cape gooseberries, granulated sugar, and water.
  3. Bring the mixture to a boil over medium-high heat, stirring frequently to prevent the sugar from sticking to the pot.
  4. Once the mixture has reached a boil, reduce the heat to low and let it simmer. Continue to stir occasionally as the jam thickens. This process should take about 30 minutes.
  5. After the jam has thickened to your liking, remove the pot from the heat and stir in the freshly squeezed lemon juice. This will add a nice tangy balance to the sweet jam.
  6. Let the jam cool for a few minutes before carefully transferring it to sterilized glass jars. Be sure to leave about 1/4-inch headspace at the top to allow for expansion.
  7. Seal the jars tightly and let them cool completely at room temperature before storing them in the refrigerator. For optimal flavor, consume within 3 months.
