Cape Gooseberry Jam
Experience a delightful burst of sweet and slightly tart flavors with this homemade Cape Gooseberry Jam. Originating from South America, the Cape Gooseberry, also known as 'Goldenberry', is a unique ingredient that brings a tropical twist to your traditional jam. This recipe transforms these petite golden fruits into a radiant, tangy, and irresistibly sweet jam that's perfect for spreading on your morning toast, swirling into yogurt, or even as a glaze for your favorite desserts.
Ingredients
- Cape gooseberries
- 4 cups, husked and washed
- Granulated sugar
- 2 cups
- Water
- 1 cup
- Lemon juice
- 1 tablespoon, freshly squeezed
Instructions
- Prepare your Cape gooseberries by removing the husks and washing them thoroughly.
- In a large heavy-bottomed pot, combine the prepared Cape gooseberries, granulated sugar, and water.
- Bring the mixture to a boil over medium-high heat, stirring frequently to prevent the sugar from sticking to the pot.
- Once the mixture has reached a boil, reduce the heat to low and let it simmer. Continue to stir occasionally as the jam thickens. This process should take about 30 minutes.
- After the jam has thickened to your liking, remove the pot from the heat and stir in the freshly squeezed lemon juice. This will add a nice tangy balance to the sweet jam.
- Let the jam cool for a few minutes before carefully transferring it to sterilized glass jars. Be sure to leave about 1/4-inch headspace at the top to allow for expansion.
- Seal the jars tightly and let them cool completely at room temperature before storing them in the refrigerator. For optimal flavor, consume within 3 months.
Tips
- Ensure your jars are sterilized to avoid bacterial growth. You can do this by boiling the jars and their lids in a large pot of water for at least 10 minutes.
- For a smoother jam, you can puree the gooseberries before cooking.
- Try using this jam as a filling for pastries, or as a topping for pancakes or waffles for a unique breakfast treat.
