- 1, peeled and sliced Avocado
- 1/4 cup Fresh basil leaves
- 1/2 cup, sliced Fresh mozzarella cheese
- 1/2 cup, halved Cherry tomatoes
- 4, large Eggs
- 2, large Flour tortillas

Instructions
- Crack the eggs into a bowl, add salt and pepper, and whisk until well combined.
- Heat olive oil in a non-stick skillet over medium heat.
- Pour the whisked eggs into the skillet. Stir gently with a spatula, scrambling the eggs until they're just set but still soft, about 2-3 minutes.
- Warm the flour tortillas in another skillet over medium heat for about 30 seconds on each side, or you can microwave them for 10-15 seconds.
- Lay the warmed tortillas on a clean surface. Evenly divide and layer the scrambled eggs, halved cherry tomatoes, sliced mozzarella cheese, basil leaves, and avocado slices in the center of each tortilla.
- To assemble the burrito, fold in the sides of the tortilla over the filling, then roll them up from the bottom. Make sure the fillings are secure inside.
