Caramelized Scallops

Instructions
- Season the scallops on both sides with salt and pepper.
- In a large skillet, heat the butter and olive oil over medium-high heat until the butter is melted.
- Add the scallops to the skillet, making sure not to overcrowd the pan. Cook for 2-3 minutes on each side, until they develop a golden-brown crust. Remove the scallops from the skillet and set them aside.
- Lower the heat to medium, then add the minced garlic to the same skillet. Cook it for 1 minute, until it becomes fragrant.
- Add the brown sugar and lemon juice to the skillet, stirring continuously to combine them with the garlic. Allow the mixture to simmer for 2-3 minutes, until it develops a syrupy consistency.
- Return the scallops to the skillet, tossing them gently in the caramelized sauce. Cook for another 1-2 minutes, until the scallops are well-coated and heated through.
- Serve the scallops immediately, drizzled with the remaining caramelized sauce from the skillet. Enjoy this dish with a side of roasted vegetables or a simple green salad for a balanced meal.
