Ingredients

Original recipe serves 4

Salt
to taste
Black pepper
to taste
Cheddar cheese
2 cups, shredded
Parmesan cheese
1 cup, grated
Heavy cream
1 cup
Eggs
2, beaten
Garlic
3 cloves, minced
Bacon
6 slices, cut into small pieces
Macaroni
2 cups

Instructions

  1. Cook the macaroni as per the package instructions. Once cooked, drain and set aside.
  2. In a large skillet over medium heat, cook the bacon pieces until crisp. Use a slotted spoon to remove the bacon, leaving the grease in the skillet.
  3. In the bacon grease, sauté the minced garlic until it turns fragrant.
  4. In a separate bowl, whisk together the beaten eggs, heavy cream, and grated Parmesan cheese to make the carbonara sauce.
  5. Add the cooked macaroni back into the skillet with the garlic. Stir well to coat the macaroni in the garlic-infused bacon fat.
  6. Gradually pour the carbonara sauce over the macaroni, stirring constantly. The heat from the pasta will cook the egg slightly, thickening the sauce without scrambling the egg.
  7. Add the shredded cheddar cheese to the skillet, stirring until it melts into a creamy sauce.
  8. Season the mac and cheese with salt and black pepper according to your taste.
  9. Sprinkle the crispy bacon pieces over the mac and cheese before serving. Enjoy while it's hot!

Tips

  • 💡 For a vegetarian option, remove the bacon and replace the bacon fat with 2 tablespoons of unsalted butter.
  • 💡 Feel free to experiment with different types of cheese for a new flavor profile.
